Here's a recipe for Moroccan-Style Grilled Meat on Skewers (Brochettes):
INGREDIENTS:
- 500g lamb or beef (cubed, boneless)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1/2 teaspoon cayenne pepper (optional, for heat)
- 1 teaspoon ground cinnamon
- 3 cloves garlic (minced)
- 1 small onion (grated or finely chopped)
- 2 tablespoons fresh parsley (chopped)
- 2 tablespoons fresh cilantro (chopped)
- Salt and pepper to taste
- Wooden or metal skewers
INSTRUCTIONS:
- Prepare the Marinade: In a bowl, mix the olive oil, lemon juice, cumin, paprika, coriander, turmeric, cayenne pepper (if using), cinnamon, garlic, onion, parsley, cilantro, salt, and pepper. Combine well.
- Marinate the Meat: Add the cubed lamb or beef to the marinade, making sure all pieces are evenly coated. Cover the bowl and refrigerate for at least 1 hour, preferably overnight for deeper flavor.
- Assemble the Skewers: Soak wooden skewers in water for 30 minutes if using them to prevent burning. Thread the marinated meat cubes onto the skewers.
- Grill the Meat: Preheat the grill to medium-high heat. Grill the skewers for 10-12 minutes, turning occasionally, until the meat is browned and cooked to your liking.
- Serve: Serve hot with a side of Moroccan couscous, grilled vegetables, or flatbread.
Enjoy your flavorful Moroccan brochettes!
