Ingredients:

  •  1 pound (450 grams) calamari (squid), cleaned and cut into rings
  •  1 cup (120 grams) all-purpose flour
  •  1/2 cup (60 grams) cornstarch
  •  1 teaspoon salt
  •  1/2 teaspoon black pepper
  •  1/2 teaspoon paprika
  •  1/2 teaspoon garlic powder
  •  1/2 teaspoon onion powder
  •  1 cup (240 ml) buttermilk (or regular milk)
  •  Vegetable oil for frying
  •  Lemon wedges, for serving
  •  Marinara sauce or aioli, for dipping (optional)

Instructions:


1. Prepare the Calamari:

   - Clean the calamari by removing the tentacles and cutting the body into 1/2-inch rings.
   - Pat the calamari rings and tentacles dry with paper towels.

2. Set Up Breading Station:

   - In a shallow bowl, mix the flour, cornstarch, salt, black pepper, paprika, garlic powder, and onion powder.
   - Pour the buttermilk into another shallow bowl.

3. Coat the Calamari:

   - Dip the calamari rings and tentacles into the buttermilk, allowing any excess to drip off.
   - Dredge the calamari in the flour mixture, coating them evenly. Shake off any excess flour.

4. Heat the Oil:
