Mechoui - Moroccan Style BBQ Traditionally, Mechoui is prepared in a large clay pit, but you can adapt this recipe for your oven. It’s an easy way to make delicious lamb ribs that are tender and flavorful. Here’s how to make it:


INGREDIENTS

  • 10 kg young lamb leg
  • 200 g melted butter
  • Salt
  • 2 tablespoons ground cumin
  • 2 tablespoons ground coriander

FILLING

  • 1 kg Chinese noodles
  • 200 g shrimp
  • 500 g ground beef (Kofta)
  • 2 tablespoons salt
  • 2 tablespoons black pepper
  • 2 tablespoons Chinese spices
  • 2 bunches of chopped parsley
  • 50 g butter


INSTRUCTIONS



Prepare the lamb

 Have the butcher remove the bones from the lamb leg.


PREPARE THE FILLING

  • Wash the shrimp and peel them. Season with salt and pepper.
  • Cook the Chinese noodles in boiling water until al dente. Drain and cut into bite-sized pieces.
  • Melt the butter in a skillet over medium heat. Add the ground beef, shrimp, parsley, salt, pepper, Chinese spices, and cook until browned.
  • Stir in the cooked Chinese noodles.


STUFF THE LAMB

  • Spread the filling evenly in the center of the lamb leg.
  • Sew up the sides of the lamb leg with needle and thread to prevent the filling from leaking out.


SEASON THE LAMB

  • Brush the lamb leg with butter all over. Season with salt, cumin, and coriander.


BAKE THE LAMB

  • Preheat the oven to 180 degrees Celsius.
  • Place the lamb leg in a baking dish. Baste with the drippings from the lamb every 30 minutes.
  • Bake for 2 hours, or until the lamb is cooked through and the internal temperature reaches 70 degrees Celsius.


GARNISH AND SERVE

  • Garnish with cheese, olives, and parsley leaves. Serve hot.


TIPS

  • For a more flavorful filling, you can add other vegetables, such as carrots, onions, or bell peppers.
  • You can also add other spices, such as paprika or cayenne pepper.
  • To make the dish more presentable, you can slice the lamb leg before serving.
