 INSTRUCTIONS:


1. Prepare the Marinade: In a large bowl, mix the olive oil, vegetable oil, lemon juice, minced garlic, cilantro, parsley, ground ginger, turmeric, cumin, saffron, paprika, black pepper, and salt. Rub this marinade thoroughly all over the chicken, both inside and outside. For best results, let the chicken marinate in the refrigerator for several hours or overnight.

2. Cook the Chicken: In a large pot or Dutch oven, add the chopped onions and place the marinated chicken on top. Add 1 cup of water to the pot.
