Moroccan Chicken Tagine with Potatoes

INGREDIENTS

  • 2 small chickens
  • 1 tablespoon chopped cilantro
  • 1 tablespoon garlic powder
  • 1 tablespoon salt
  • 1 tablespoon white pepper
  • 1 tablespoon paprika
  • 1 tablespoon ginger
  • 3 tablespoons olive oil
  • 3 onions, chopped
  • 5 cloves garlic, minced
  • 1/4 teaspoon saffron
  • 1/4 cup olive oil
  • 1 pound potatoes, cut into chunks
  • 1/4 cup black olives
  • 1 piece of pickled lemon, sliced
  • 1/4 cup green olives


INSTRUCTIONS

  1. Wash the chicken thoroughly and cut it into small pieces.
  2. Season the chicken with salt, pepper, ginger, paprika, cilantro, and garlic powder.
  3. Add olive oil and garlic to a bowl, mix the ingredients, and set aside to marinate.
  4. In a pot over medium heat, add olive oil, onions, and garlic. Sauté until the onions turn golden brown. Add saffron and set aside.
  5. In another pot, boil the chicken in water for 30 minutes, or until cooked through.
  6. Preheat the oven to 350°F (175°C).
  7. In a tagine, place the chicken pieces and potatoes.
  8. Add the onion slices, a little of the chicken broth, and a piece of butter on top.
  9. Bake in the oven for 30 minutes, or until the potatoes are tender.
  10. Garnish with olives and pickled lemon, and serve hot.
